Did I already mention that I was impatient? I fed it late today. I was busy. Still seeing that separation. Still only small bubbles.
Fed it extra thick today. Also threw out some into another container to test it. It is possible that the slowness is due to temperature and the fact that I'm using bleached flour. Bleached flour has fewer microorganisms. I could also not be feeding it often enough. Too many variables.
I'm giving it until the end of next week. I want to bake something to send to a friend along with sourdough bread so it's time sensitive.
